There are hybrid varietals exclusive to their respective farms, and also processing methods devised and perfected by CGLE.

With a reputation for producing competition winning coffees, processes are matched with varieties to produce unique flavour profiles.

Five farms now make up the Café Granja La Esperanza: Cerro Azul, Las Margaritas, La Esperanza, Potosi and Hawaii.

 

FERMENTATION

Once the cherries are carefully selected when they are picked and then when they are about to start a process, they are set in a special tank closed but not sealed in order to let the air ow. Fermentation last 48 hours in whole cherries and thanks to higher concentration of sugars it will allow the cup to have more intense notes. The temperature during fermentation is controlled every 6 hours so it won’t reach temperatures above 30ºC.

DRYING

Coffee is left for about 30 hours in silo (temperature aprox of 40°C), it is then pass to solar dry for about 15 days.

CUP PROFILE

Fragance and Aroma:Red fruits, cherries, jasmine floral, light notes of lemongrass, white chocolate.

Taste and Aftertaste: White chocolate, vanilla, cherries in syrup, floral jasmine, residual caramel and green apple.
