More About This Coffee
Fermentation
The coffee cherries are rigorously selected.
They are then placed in a tank of water to remove the less dense cherries. Once ready, we measure the cherries’ Brix degrees before de-pulping and fermenting them in open tanks for 48 hours
Drying
The coffee is dried in mechanical dryers for 3 to 5 days at 38°C.
Once dried, we store the coffee in climate-controlled rooms at a consistent temperature between 18°C and 19°C to preserve its quality.
