Project Egg: Ambulanza Dell’ Espresso

From a quiet idea to a working espresso bar on three wheels. What started as a secret side project has become one of the most hands-on builds we’ve ever done.

Project Egg: The Espresso Ambulance

It started with a small three-wheeled Piaggio Ape. I bought it quietly and called it Project Egg, a nod to its duck egg blue colour. No one in the roastery knew about it. I sent redacted letters, left hints, and dropped clues until the day we finally revealed it.

The idea was simple: create something that could move, connect, and serve. Something that brought our coffee to life beyond the roastery.

Eóin took on the build. He used reclaimed pallet wood, cut, sanded, and pieced it together into a frame that fits perfectly inside the Piaggio. Every joint, every drawer, every finish came from his hands. We varnished it in a mix of tones, added a drawer with a knock box, and found space for everything we needed.

Then came the heart of it — a La Marzocco Linea Mini and a Pico grinder. Craftsmanship meets mobility. It’s our Espresso Ambulance: a small but powerful setup that carries the same energy and precision as our main bar, just on three wheels.

We unveiled it at our Cold Brew event, and now we’re taking it on the road. The plan is to use the Egg for customer activations, events, and openings. When a café launches or needs support, we’ll be there — coffee ready, engine humming.

The Piaggio represents what we believe in: curiosity, craft, and community. It’s proof that even small projects can turn into something that carries your whole story forward.
