Ethiopia is considered as the cradle of coffee and famous for the fact that it was in the forest in the Kaffa region where Coffea Arabica grew wild. Nowadays, the country´s coffee production is characterized by a typical “smallholder” structure and so the coffee cherries from this particular coffee are being brought to the Aricha processing station from 650 smallholders. Directly after picking only the fully ripe and red cherries are being selected and exposed to the sun on so called “African Beds” in order to dry down carefully to approx. 12% humidity. Around the region of Aricha is a nice story entwined: When an old man gets white hair, the bark of aged trees also turns to white and as those trees are widely found around that area, people call it “Aricha”. A common tradition celebrated by the society is called “Aba-Geda”: Lead by an elder and much respected person the society comes together and listens to the master´s appeal of maintaining peace and harmony in the community. During this get together they also sing prayers to God for enough rainfall during times of draught.
