The quality for such a dedicated micro-lot starts with the proper harvesting of only the red-ripe cherries.
Once this careful selection has taken place, the cherries are fermented for 16 straight hours.
Afterward, they are depulped and undergo a further prolonged fermentation process in a tank for another 30 hours.
Finally, the coffee is fully washed and dried inside solar dryers for about 25 days.
