This 30kg microlot is from finca La Capilla, which is run by Álvaro Sarrias Artunduaga.
He produces this excellent coffee on his 3.3 ha farm located in the municipality of El Pital in the Huila department.
He combines coffee trees of two different varieties on his land: 70% of Castillo and 30% Variedad Colombia.

He invests in modern machinery to continuously diminish the usage of natural resources such as water while increasing the quality of his coffee.
After harvesting the coffee cherries, they are naturally processed.
The cherries are spread out in thin layers and dried in the sun for about 20 days. For an even drying process, they are moved several times a day.
Afterward, the cherries are hulled and prepared for shipment.
This special microlot comes with an intense and complex sweetness, fruity berry and plum aromas, as well as hints of rum.
