Cascara, meaning “peel” in Spanish, is the dried skin of coffee cherries, traditionally discarded but recently celebrated for its unique flavors and health benefits. Dried under the sun with constant care, it’s brewed like tea and offers intense notes of hibiscus, cranberry, and honey. Rich in antioxidants and vitamins, Cascara has become popular in Europe and the US, inspiring creative beverages like cold brew and sodas. Typically rare for export, we’re proud to present this single-origin Cascara, traceable directly to the producer.

The Process

Cascara means peel or skin in Spanish – it is in fact the dried skin of our coffee cherries.

The cherries are carefully dried in the sun under constant circulation.

Brewed similar to tea, Cascara has intense tasting notes of sweet hibiscus, cranberry, and honey.

It tastes very sweet and has a high concentration of antioxidants and vitamins B2 and E.

Over the past years, Cascara has started to receive more attention in cafés across Europe and the US.

Its uniquely refreshing flavour has even inspired some people to create coldbrew/nitro/soda drinks with it.

Cascara is barely exported.

We are thus proud to have it on our offer list and present you this special single-origin Cascara, traceable directly to the producer.

The Farm

Hacienda Sonora sits at the foot of the Poas Volcano. The farm operates on 100% renewable energy generated by a hydroelectric generator that transforms rushing water into energy.

The energy fuels the wet and dry mills and provides free electricity for everyone living and working on the farm. On the whole, Hacienda Sonora has shared its success generously, paying fair wages to all workers and bolstering the local community.

The farm and it mill cover approximately 100 hectares. Of those, 45 hectares are devote to shaded coffee lands.

Coffee plants are surrounded by exotic trees and other native vegetation. This biodiversity promote soil health and maintains the nutrient-rich soil that helps grow dense, delicious cherry.

The remaining land has wil forest reserve growing on 35 hectares and 20 hectares for sugarcane, which has been grown on Hacienda Sonora’s land for over 150 years.

Brew Recipes

Hot
Use 5/6 gr of Cascara and 200 ml of hot water at 95 degrees. 4 min steep time.

Cold
Use 20 gr of Cascara and 1000ml of cold water. Keep 8 hours in your fridge. Served over ice or NITRO ⚡️⚡️
