We have perfected the roast for this immaculately clean coffee. Roasting a little faster than normal with the drum seriously preheated and loaded with conductive heat.
Normally on small batches we pull our set points back so as not to rush the roast but here we decide to go all in and develop the beans above and beyond 35% development time ratio.
The result is a creamy body with beautiful malic acidity with fresh lime, the blackcurrant adds to a hugely satisfying cup.
The name Gatomboya is a Kikuyu word which means swamp and refers to the terrain of the area.
The local Gatomboya stream helps process this excellent washed coffee, with all traces of mucilage removed in the clean stream of fresh water. The cherries, collected from over 600 members of the Barichu Farmers Cooperative, are delivered to the Gatomboya Factory to be sorted by maturity and quality grouping before pulping and washing. The coffee receives between 24 and 48 hours of fermentation, dependant on density, before drying on raised beds for and average duration of 10 days.
