This year, we’re excited to release Batch Four of our 209 Barrel-Aged Coffee, continuing our collaboration with Dingle Distillery. The 209 series has become one of our most anticipated annual releases, combining the craft of barrel-aging with carefully sourced, exceptional beans.
The Name 209 & Barrel Aging
The name 209 comes from Batch One, which was aged for 209 days. Storing and transporting coffee in barrels is a longstanding tradition in the coffee world, helping green beans develop subtle flavours and complexity during storage. For this release, the beans spend that time in oak casks previously used by Dingle Distillery. During aging, the green beans absorb delicate notes from the spirit-soaked wood, although no alcohol remains once they are roasted. Our roasting process is designed to carefully preserve this unique character while highlighting the natural qualities of the beans.
What’s So Special About Batch Four
Batch Four introduces something new: the Gasharu Natural from Rwanda. These Red Bourbon beans are grown at high altitude and bring a bright, layered complexity to the coffee. The combination of Gasharu’s natural fruit-forward notes with the depth of the Pedro Ximénez sherry cask results in a coffee that is both vibrant and nuanced.
